Hilton St Anne’s Manor is delighted to announce its latest addition to the team, Head Chef, Eduardo Battifora. Eduardo joins the team ahead of launching our new menu on 1st May.
Eduardo make an exciting new addition to the team, with over 20 years’ experience within the Hotel, restaurant and wedding & event catering industry. He has worked alongside Michelin star chefs in award winning venues. Eduardo has travelled the world and lived in many countries including growing up in Peru which contributes towards many of his food concepts and ideas.
Your vision for St Anne’s Manor
To modernise the menu creating a brasserie style feel with a unique twist. Using fresh locally sourced produce to create seasonal menus for all to enjoy.
Tuna tataki – a Peruvian/Japanese fusion dish, currently a culinary sensation
Salmon Ceviche – A traditional Peruvian dish
My inspiration comes in many forms from my upbringing and travels, working with very experienced chef’s to the latest culinary trends experienced when dining out.
What is your favourite restaurant and why?
Toshiro Konishi has to be one of my favourites due to its vibrant and original menus which represent a fusion of two cultures which is exactly what Peru is all about, being that it is such a multicultural place.
